What You Need:
- 1 large russet potato
- 1-2 tablespoon butter (or more if you prefer)
- 3-4 tablespoons shredded cheddar cheese (optional)
- Salt and black pepper to taste
- Sour cream (optional)
- Any other toppings of your choice
Method:
- Wash the skin of the potato very well
- Prick the potato several times using a fork (to allow steam to escape and potato to cook through)
- Place the potato on a microwave-safe glass dish
- Cook on high for 5 minutes
- Turn over and continue to cook for about 4-5 minutes more. Depending on the size of your potato, the cooking time will vary. If the middle of the potato is still hard, continue to microwave at 1 minute intervals till you reach your preference
- When the potato is soft, remove from the microwave and cut in half
- Sprinkle with salt and pepper to taste and mash-up the inside a little with a fork
- Top the open sides with butter and cheese
- Return to microwave and cook for about 30 seconds to 1 minute more, to melt the cheese. You might want to loosely cover the dish with paper towel at this point to prevent content from splashing onto your microwave
- Remove from microwave and plate
- Sprinkle with the rest of your other preferred toppings (if any)
- Top with about 1 tablespoon more cheddar cheese and sour cream
- Enjoy!
