Microwaved Baked Potato


Serves: 1

What You Need:

  • large russet potato 
  • 1-2 tablespoon butter (or more if you prefer)
  • 3-4 tablespoons shredded cheddar cheese (optional)
  • Salt and black pepper to taste
  • Sour cream (optional)
  • Any other toppings of your choice

Method:

  1. Wash the skin of the potato very well
  2. Prick the potato several times using a fork (to allow steam to escape and potato to cook through)
  3. Place the potato on a microwave-safe glass dish
  4. Cook on high for 5 minutes
  5. Turn over and continue to cook for about 4-5 minutes more. Depending on the size of your potato, the cooking time will vary. If the middle of the potato is still hard, continue to microwave at 1 minute intervals till you reach your preference
  6. When the potato is soft, remove from the microwave and cut in half
  7. Sprinkle with salt and pepper to taste and mash-up the inside a little with a fork
  8. Top the open sides with butter and cheese
  9. Return to microwave and cook for about 30 seconds to 1 minute more, to melt the cheese. You might want to loosely cover the dish with paper towel at this point to prevent content from splashing onto your microwave
  10. Remove from microwave and plate
  11. Sprinkle with the rest of your other preferred toppings (if any)
  12. Top with about 1 tablespoon more cheddar cheese and sour cream
  13. Enjoy!

NOTE:
Microwave ovens vary. Cooking times may need to be adjusted.
